I'm looking for some recipes that I can make without a lot of chopping and stirring, so as to be less hard on my wrist. Anyone have an favorites to recommend? No pork please.

I may be slow to reply to comments due to the wrist issue

kolleh: Portrait of me. It's in a cute, hand-painted style with chalk-white skin, pink cheeks and black eyes. She's smiling and has large black cat's eye glasses and short, bobbed dark brown hair. The background is soft tan and ringed with autumnal details like acorns and fall leaves. (Default)

I love this recipe for weeknights, especially with cubed atsuage thrown in. (I throw it in unrinsed because I find the bit of oil on it gives the soup a little something, but that's me.) https://thevietvegan.com/easy-glass-noodle-miso-bowl/

And you can leave the mushrooms whole for this one, though stirring the sauce might be a problem? https://www.triedandtruerecipe.com/vegan-orange-glazed-mushrooms/

As an aside, have you thought about getting a food processor? So long as you're not married to the idea of perfectly chopped veggies, they can make life way easier!

I definitely second the suggestion of a food processor!
