Jelly Donuts

I made jelly donuts for a crowd last night. This is becoming my new Hanukkah tradition. Well this is only the 2nd time I've done it. But making donuts is super exciting. I love how they puff up when they hit the hot oil. This year I used a recipe that has the jelly in the donuts as you fry them . More work to ensemble, but worth it.

Oooh that sounds lovely :) someday I will come and visit you for Hanukkah ...

I've tried to make doughnuts but had trouble keeping the oil temperature consistent (after a bit the oil got too hot, and then they were cooked on the outside and still raw in the middle) - any tips?

The oil is somewhat tricky. I use a candy thermometer to help keep track of the temperature of the oil, but even then I had to fiddle with the stove a lot. I hear you can buy a deep firer that will keep the oil at constant temperature, but that doesn't seem worth it for something I make old once a year.
